Tortellini & Ham Soup
Ingredients:
- 1 tbsp olive oil
- 1/2 cup ham, cubed
- 1/4 cup onions, chopped (optional)
- 1 minced garlic clove (optional)
- 1/2 tsp dried basil leaves
- 1 can cream of celery soup
- 1 cup frozen peas
- 1 soup can of milk
- 2 tbsp chopped fresh parsley
- 1/8 tsp pepper
- 2 cups hot cooked tortellini pasta
How to make
- Cook ham, onion, garlic, and basil for 2 minutes in hot oil. Stir often.
- Stir in soup and peas, wait until it starts boiling. Reduce heat to low and cover; cook 5 minutes or until peas are tender.
- Stir in milk, parsley and pepper; heat through. In large bowl, pour soup mixture over tortellini; toss lightly to coat. Serve with cheese (if desired).
