Tomato Basil Crackers

 

INGREDIENTS:
1 1/4 cups plain flour
30gbutter
2 tablespoons chopped fresh basil
2 tablespoons tomato paste
1/4 teaspoon ground black pepper
2 tablespoons water, approximately
1 egg white, lightly beaten
2 teaspoons sea salt

RECIPE:
Sift flour into bowl, rub in butter. Stir in basil, paste and pepper, add enough water to mix to a firm dough, knead gently on lightly floured surface until smooth; cover, refrigerate 30 minutes. Roll dough on lightly floured surface until 2mm thick. Prick all over with fork, cut into 4cm squares, place about 1cm apart on greased oven trays. Brush with a little egg white, sprinkle with a little salt. Bake in moderate oven about 15 minutes or until lightly browned; coolon trays.
Makes about 60.

Recipe can be made 3 days ahead. Suitable to freeze. Not suitable to microwave.
