Tiramisu

 

INGREDIENTS:
280g packet golden sponge cake mix
2 eggs
1/2 cup water
2 teaspoons cocoa
2 teaspoons icing sugar

SYRUP:
3 teaspoons dry instant coffee
1/4cup hot water
1/2 cup marsala

FILLING:
3 egg yolks
2 tablespoons castor sugar
750g mascarpone cheese

RECIPE:
Grease a deep 23cm round cake pan. Make sponge according to directions on packet, using the eggs and water. Spread mixture evenly into prepared pan, bake in moderate oven about 40 minutes or until cooked. Turn onto wire rack to cool. Split cold sponge into 3 layers, place one layer on serving plate, brush with one-third of the syrup, spread with one-third of the filling. Top with second layer of sponge, brush with half
the remaining syrup and half the remaining filling. Top with remaining sponge, brush with remaining syrup and spread remaining filling over top and side of cake. Dust top with combined sifted cocoa and icing sugar; refrigerate overnight.
Syrup: Combine all ingredients in small pan, bring to the boil, simmer 1 minute.
Filling: Beat egg yolks and sugar in small bowl with electric mixer until thick and creamy. Gradually add mascarpone and continue beating until well combined.

Serve dessert decorated with chocolate curls, if desired. Mascarpone is a soft cheese available from delicatessens. Recipe best made a day ahead; keep refrigerated. Not suitable to freeze. Not suitable to microwave.
