Sesame Chicken and Vegetable Stir-fry

Time: 30 minutes
Serves: 4

INGREDIENTS:
2 tablespoons light soy sauce
2 tablespoons sherry
1 tablespoon grated fresh ginger
1-2 cloves garlic, crushed
1 teaspoon soft brown sugar
2 teaspoons sesame oil
3 chicken breast fillets, thinly sliced
6 spring onions
1 red capsicum
1 zucchini
1 small carrot
1 celery stick
2 tablespoons oil
1 tablespoon sesame seeds, toasted

RECIPE:
1. In a large bowl, combine the soy sauce, sherry, ginger, garlic, sugar and 1 teaspoon of the sesame oil. Add the chicken; set aside. Slice the spring onions, dice the capsicum and thinly slice the zucchini, carrot and celery.
2. Drain the chicken, reserving the marinade. Pat the chicken dry with paper towels.
3. Heat 1 tablespoon of the oil and the remaining sesame oil in a wok. Add the vegetables; stir-fry for 2-3 minutes and set aside. Heat the remaining oil, add the chicken and stir-fry for 3-4 minutes, or until just cooked. Return the vegetables to the wok with the reserved marinade. Stir-fry for 2-3 minutes. Top with sesame seeds.

    109 carbs?? Not likely :)

    Great marinade. I used different vegetables (the pre-cut stir fry veggies in the produce section.) I also velveted the chicken. Our family will prepare this again.
