Italian Lemon Gelato

 

INGREDIENTS:
1/2 cup castor sugar
1/2 cup water
1/2 cup sweet or dry white wine
1/2 cup strained lemon juice
1 egg white

RECIPE:
Place sugar, water and wine in small pan, stir over heat, without boiling, until sugar is dissolved, bring to boil, reduce heat, simmer, uncovered, 10 minutes. Allow to cool. Stir juice into cooled mixture; mix well. Pour mixture into 14cm x 21cm loaf pan, freeze about 1 hour or until mixture is just firm. Beat egg white in bowl until firm peaks form. Remove gelato from freezer, turn into bowl, beat with fork until smooth. Fold in egg white, return to pan, freeze until firm.
Serves 2 (or 4 ‘as a topping for fresh fruit).

Recipe can be made 4 days ahead. Not suitable to microwave.
