Herbed Chicken with Tomato Caper Sambal

Serves: 4

INGREDIENTS:
16 chicken tenderloins
1 teaspoon ground sweet paprika
1 teaspoon dried thyme
1 teaspoon dried oregano
pinch of chilli powder
1/2teaspoon freshly ground black pepper
1 tablespoon olive oil
1 tablespoon freshly squeezed lemon juice
Tomato Caper Samba
4 large firm tomatoes, chopped
1 tablespoon baby capers
1 small red onion, finely chopped
1 clove garlic, crushed
2 teaspoons finely chopped fresh thyme
2 teaspoons finely chopped fresh oregano
1/2teaspoon freshly ground black pepper

RECIPE:
1. Place the chicken tenderloins in a large dish. Combine the paprika, thyme, oregano, chilli powder and pepper in a small bowl. Stir in the oil and juice to form a paste and coat the chicken with it. Set aside.
2. To make Tomato Caper Sambal: Combine all the ingredients in a bowl. Set aside.
3. Heat a little oil in a heavy-based pan and add the tenderloins. Cook for 2-3 minutes each side, turning once, until cooked through.
Serve with Tomato Caper Sambal.
