Fruity Bananas and Coconut
INGREDIENTS:
2/3 cup chopped pitted dates
1/2 cup shredded coconut
283ml can (1 1/4 cups) coconut milk
2 tablespoons brown sugar
20g butter
4 firm bananas, peeled, sliced
RECIPE:
Combine dates, coconut, coconut milk and sugar in bowl; stand 10 minutes. Heat butter in pan, add bananas, cook, stirring, over high heat 1 minute. Add coconut mixture, cook, stirring, until heated through.
SERVING:
Serve desserts topped with a strawberry, if desired. Recipe best made just before serving. Not suitable to freeze. Suitable to microwave
