Cucumber Salad with Peanut Dressing

INGREDIENTS:
1 large green cucumber
1 large carrot
250g broccoli flowerets

CREAMY PEANUT DRESSING:
1 tablespoon peanut butter
1/4cup cream
1/4 cup mayonnaise
2 green shallots, chopped

RECIPE:
Cut cucumber lengthways in quarters. Discard seeds, cut cucumber quarters and carrot into 5cm lengths. Peel strips from each piece, place into cold water until curled, drain well. Boil, steam or microwave broccoli until tender; rinse under cold water, drain. Combine vegetables with dressing. Creamy Peanut Dressing: Combine all ingredients in bowl. Serves 4.

SERVING:
Recipe best made close to serving. Not suitable to freeze. Suitable to microwave.
