Chicken with Brazil Nut Butter

Chicken with Brazil Nut Butter

Time: Ready to eat in 30 minutes

Serve: 4 People

Ingredients:

1/2 cup Brazil nuts, toasted
1 fresh red chilli, seeded and finely chopped
90 g (3 oz) butter, softened
2 tablespoons finely chopped fresh basil
4 chicken breast fillets
1 tablespoon freshly squeezed lemon juice
2 tablespoons olive oil

Recipe:

1. Place the Brazil nuts, chilli and butter in a food processor or blender and process until combined. Transfer to a bowl and stir in the basil. Cover and refrigerate until just before serving.
2. Slash the chicken fillets deeply 3-4 times diagonally across the top. Place in a dish and coat with the lemon juice and 1 tablespoon of the oil.
3. Heat the remaining oil in a heavy-based pan. Add the chicken and cook for 3-4 minutes each side, turning once, or until cooked through. Brush a few times with the marinade during cooking. Cut each fillet into 3-4 slices.
4. Serve the chicken slices with couscous and a spoonful of the Brazil Nut Butter.

Note: Add flavor to instant couscous by stirring through 2 tablespoons finely chopped fresh parsley, 2 teaspoons grated lemon rind and 20 g
(2/3 oz) butter just before serving. Season well with salt and pepper, to taste.
