Apple and Red Cabbage

INGREDIENTS:
30g butter
1 medium (about 150g) onion, chopped
1 green apple, grated
2 tablespoons red wine vinegar
2 tablespoons brown sugar
l/2 small (about 700g) red cabbage, shredded
2 tablespoons chopped fresh parsley

RECIPE:
Heat butter in pan, add onion, cook, stirring, until soft. Add apple, vinegar, sugar and cabbage, cook, stirring, until heated through. Stir in parsley just before serving.

SERVING:
Serve cabbage sprinkled with extra chopped parsley, if desired. Recipe best made just before serving. Not suitable to freeze. Suitable to microwave.
