Almond Cardamom Streusel Cake

 

INGREDIENTS:
185g butter
1 cup castor sugar
1 teaspoon grated orange rind
2 eggs
1 1/4 cups self-raising flour
3/4 cup buttermilk
1 1/2teaspoons vanilla essence

ALMOND CARDAMOM STREUSEL:
1 cup (170g) blanched almonds, toasted
1/3 cup brown sugar
1 teaspoon grated orange rind
1/2teaspoon ground cardamom

RECIPE:
Grease a 20cm ring pan, sprinkle base and side with almond cardamom streusel. Shake away excess streusel, reserve. Combine butter, sugar and rind in small bowl of electric mixer, beat until light and fluffy. Add eggs, one at a time, beating well after each addition. Stir in sifted flour and combined buttermilk and essence in 2 batches; mix well. Spread one third of the cake mixture into prepared pan, sprinkle with some ofthe reserved streusel; swirl through with knife. Repeat with remaining cake mixture and streusel. Bake in moderate oven about 45 minutes. Stand 5 minutes before turning onto wire rack to cool. Almond Cardamom Streusel: Blend or process almonds, sugar, rind and cardamom until fine.

Serve dusted with icing sugar, if desired. Recipe can be made 2 days ahead. Suitable to freeze. Not suitable to microwave.
